Is there one indispensable gadget or tool? Forget about all the junk they’re selling. There are three tools you need to grill: long-handled restaurant tongs, a $2.19 heavy-wire metal brush to keep your grill clean and your favorite beverage.
So where to start? A lot of grill books are down on lighter fluid, but I recommend it. When people look out on the porch and see a fireball shooting up to the sky, it creates a mise-en-scene.
How do you control that fireball? Your fire should be banked up the side so one part of your grill is totally hot and one side doesn’t have any fire beneath it. When things start to burn, move them where there’s no direct heat.
Can’t I just use the grill cover? I’m down on covers. Covering is really bad technique because the food bakes in fatty, greasy smoke.
Is gas for wimps? Yes. You might as well be cooking inside. It’s grilling light.
